2009 mobius lsv adding fat sac 750

Is this (reprograming the fill time) just an issue on the 2009+ models?
Or will I need to do something like this on my 08 with the 1100lb bags??

yes, programming only required on 2009+

Can I just keep flipping the switch to get it to fill or will it just quit and not go over 400 gallons?

yes, on a 2009 you can do that, but that's sort of a PITA.
