    Nice job Hack. I smoked up 3 racks for our 4 July pool party as well. I didn’t take pictures. I swear I only use the camera on my phone to scan documents anymore.

    1 hr at 225, until you get pullback. Spray every 15 min with 50/50 apple juice/water or apple cider vinegar/water.

    Never failed with 3/2/1, however will try that mad scientist 4/1 method for shits and gigs.

    No sauce here, I have my go to rub, Cherry wood for smoke, coke for liquid in foil stage.

    Always have gone back ribs, never tried spares.

    They were scrumptious! Yes I usually do the 3-2-1 method for ribs and hasn’t steered me wrong so far.

    I’ll paste my FB post in case you want to try this rub or baste. If you make ribs already then most of this is familiar with you.

    Dry rub was my “Wilson Blend” of Rendezvous bbq rub, Mediterranean salt, black pepper, Japanese 7 spices (this is where it’s at), Cheyenne red pepper, onion powder, touch of garlic powder and ground cinnamon. I rub mustard on the ribs a binder and then season liberally both sides. Wrap on foil and let them sit overnight in fridge.

    Low n slow indirect smoked @ 225-250 degrees for 3 hours with mesquite wood chunks. Bones down / meat up.

    Pulled ribs off grill to prep for steam wrap.

    Rib meat side facing down / bones up I coated aluminum foil with butter, Sweet Baby Ray’s bbq sauce and sprinkled brown sugar. I do this for both sides of coursed then double wrap in foil for good seal of juices.

    Place wrapped ribs meat side down and let cook at 250-265 degrees for 2 hours while spritzing with 50/50 mix of apple juice and apple cider vinegar every 30 minutes.

    By this time ribs should have some give to them and check with bounce method for cracking. If seeing some bones on the ends pull them off and prepare for wet baste.

    Wet baste was made with Sweet Baby Ray’s bbq sauce, jalapeño juice, a few drops of Heinz 57, Mediterranean salt and black pepper. BTW this was the best baste mixture I’ve made so far!!

    Mopped ribs both sides with wet baste. Place on grill again meat side up and let cook for 45 mins to an hour or until 180-190 degrees internal meat temp.

    Give it a try and let me know what you think ��

    So as usual my wife and I didn't capture many pics this weekend but I did get this one of the fireworks at one of the marinas on the lake. We spent 3 full days at our lake house with family and friends and it was blast. We also got a new neighbor next door right after Memorial Day, super nice people and they have 3 stand up skis that they are super generous with and let us ride. I had never ridden one before and have to say that it is way more of a work out than I ever imagined or at least a different workout LOL anyways our neighbor is pretty talented on them so here are a few videos
