Help me with what I'm looking at
I'm coming from an I/O and I'm not sure what I'm looking at.

Yes that is the water intake hose to the tranny cooler that is black sheathed rubber and on the second to last pic is it's shut of valve to the engine water pickup after that, and on that hose is where you would mount the strainer if you want one. The shiny black hoses are ballast lines and yes that is the plug under the coupling to drain water. Last pic is the paddle wheel speed sensor.

Yes, but I highly recommend getting "The Plunger". It looks just like a toilet plunger, but has a hose fitting on the side. It's inexpensive and there's a reason for it: If you add a valve to circulate clean water, you wont be able to assure the impeller is doing it's job. The plunger goes under the boat and forces the boat to intake water like it would in the water. If it doesn't suck up water you have either an impeller or water pump issue.

It looks like your transmission drain. The drain for the hull should be in front of the motor. "Lowest" point in the hull. When you're refreshing fluids, the most painless way is with a suction pump through the dip stick hole to pull fluid out. If you do this regularly you wont need full flushes.
Fresh water shut off. The plunger would be placed under this.
ATTACHED PIC is the transducer or paddle wheel for your speedo.

I used to use the plunger for driveway running - what a PITA... and a mess to boot.
When the time comes, invest in one of these and never look back. Goes in-line on your fresh water pickup between the hull and the v-drive.
You could still try the plunger if you are wary but you'll probably find it's not worth it anymore!So when is this "old enough to know better" supposed to kick in?

Dunno - could be. I thought that was more of just an in-line filter than an actual connection for a hose.
So when is this "old enough to know better" supposed to kick in?

sorrycharlie - yes - the indmar strainer pro allows a water hookup and you should install this. I have it and it works great. Don't by a fake a lake they suck to set up and you get all wet which is fine in july but really sucks in November.
When you run your boat on the stainer pro you will close the water intake valve you have pictured. Remember to reopen this when complete or you will overheat the engine when you run it again.2017 Axis T23

Seems like I have read that a hose cannot get the engine enough water. Why would something like this even work? Or is it ok at idle to warm oil?
