I always have gone with 3 feet.

I set my Depth gauge to -3 which makes it read 3 feet less then actual depth, this is so I know the depth from the bottom of the prop so I don't hit it on the ground.

We have been in pretty shallow water at speed, when the rider went down, the boat got "stuck" on the bottom. had to dump all the ballast and some people to get out.

for idling along, what ever the draw depth is, considering the weight of everything you have in at the time. when you take off, the boat does drop in the water a bit, at least that is how we found the rock once.

my preference is deep enough to not touch the bottom when i jump in or fall.

Wow - 3ft at speed sounds ballsy. "Stupid but Ballsy" - what movie?

I also wouldn't trust the depth to remain consistent but around here we tend to have stumps, rocks and logs that like to poke their head out and the river current changes the channel depth and sand bars every year.

Idling along sure, but 20mph+? Talk about some serious pucker factor.
So when is this "old enough to know better" supposed to kick in?
