That pic of the three above is silvertex. It is the soft stuff found in many new boats head rest area.
Here is Gemini and Apex that I have also seen in new boats.

Contact Perfect Fit and buy yourself some full yard samples, the little squares don't represent the actual products well enough, On the colors that you don't end up using, use those to practice on.

Get a Singer from Amazon that does vinyl, they aren't that expense now.

I'm not a big fan of white vinyl in a white hull because one or the other is always going to be off a little or look dirty.

Charcoal is going to look almost black from just a little ways away and definitely gets hot. If you're looking for a high contrast finish then charcoal with a bright blue and some lighter gray would look sharp IMO. Hard to beat the combination of light/dark with a bright color to set it off. If you don't go with carbon fiber, you can do other accents, stitching or patterns to change it up. Mine is all lightly textured Naugahyde with some style mixed in.

I say yes on the piping for sure. It makes a big difference around the edges where the seats sit or touch the boat. When I got mine redone last year they didn't put piping on the back seats and I didn't like it at all.
