Congrats on carefully considering your options.
You will never want less ballast than your boat can carry. Get the G3, and you'll be able to drop in bigger bags anytime, without changing the plumbing.
The biggest questions that you'll need to answer are not about the boats' options, but about yourself and what you want to do on the water over the next few years. If you want to specialise in wakeboarding and want a bigger wake, or want to entertain a bigger crowd (routinely more than 6-7 people) in comfort, or bring a lot of gear... the XLV is the better choice. In fact, many a boat owner suffers from "two-foot-itis" -- wishing he had a somewhat bigger boat. If you think that you'll suffer from this in the next 5-8 years, you might as well save yourself the cost of one boat purchase and go straight to the one that provides "doubt removal".
You might have specific needs that the OBV serves better. If you want to store your boat in a conventional garage, tow it with a vehicle that cannot confidently handle 5000 lbs plus people and gear, push it by hand around a storage area, or create a narrower wake for beginners (especially below 20 MPH), the OBV (or LSV) could mean that less is better.
If making this choice is your most difficult task this year, you can consider it to be a good year!

I've never heard it put as "2 foot- itus" but when I purchased my XLV in 08, I thought "I don't want to be wondering what it's like to have the biggest wake in all the Moomba lina and a wake that is pro level, when from the beginning it was only a few thousand more then a OBV or LSV. Now I am soooo very glad I did. The room is great for families (we invite another family and its quickly at 9 people or more and it's no problem) , or when it only a few guys, we have all have room to stretch out. I'm up in Canada where it's cold (duh) so we often leave the cover over the bow and with the heater on, it gets pretty toasty in there and the kids love to go up there and play. It also then keep all the wind out of the boat.
Oh ya, I fish a lot and its great to have all that room when you have 4 or 5 people fishing.

Didn't the XLV get a minor hull revision in the last year or two?

Really good points everyone... Thank you for the information... In considering both boats, for the price, I think we are leaning towards the XLV. I recd the specs today and the bigger boat just seems to more boat for the price.... Eitherway we cannot go wrong based on what you have all stated. Thank you !!

XLV all the way!!! You can always upgrade the ballast capacity if you want. Besides, you will enjoy the handy-dandy beer cooler within arms reach of the Captain's Chair!

Plus the weight difference isn't even that big. I think the new Outback V is 3200lbs and the XLV is 3600lbs.
