It's possible that you just missed a submerged stump on your maps the first time. Or fluctuations in water level of a few inches, or ballast/crew/boat weight could make a difference in bumping one...

Can you just disconnect the line leaving the fuel pump and attach a hose there to fill your cans? Let the boats fuel pump do the work.

Hey, that red/tan yamaha looks just like one of mine! That was sure enough the boat to have back in the day. Virtually no wake! Which was the ideal for fast, hard cuts back and forth.

Those look good. Mine from the factory has a horizontal stabilizer tab or"wing" as I have heard some call it near the bottom. What mfg FAE does Supra/Moomba put on their boats from the factory?
