After going to the Grand Opening of Waterski Boats Dallas, my wife has decided she'd like a center cushion for the bow. Does anyone with a newer LS (or LSV?) have one they don't use?

Order it from your dealer. They will want to match your Hul number in order to make sure the color patterns are right.

After your summerization project you should be feeling handy. Get some marine grade backer, order the vinyl from Ebay and go to town!
