Is there a good place to check for a water temp gauge not working. It just reads 999.

Odds are you have a bad airmar triducer.

It’s a combination of paddle wheel speedometer, depth gauge and water temperature.

Yup mine would do the “- - -“ when my triducer was going out. The replacement one worked good for a year but now it glitches when I get around wakeboarding speeds. I’ve grown to ignore the dang thing.
