I have a 2008 Moomba LSV with Indmar 325 Assault.

I love to slalom at 36mph, but I also love to surf.
When I surf, I run 1100 pounds in the rear on one side and 400 pounds in the middle. I sometimes also add water to the bow sack.

What is the best prop for these two extreme differences in use?

Wakemakers suggested the Acme 1939.
Nettleprops suggested the Acme 1847. Not sold on this one as will lose 3-4 mph on top speed.

Any suggestions or comments?

IMO, you aren't going to get better opinions than what you have from these guys.

I can't claim to have better insight than Wakemakers, but I have the Acme 537 on my XLV and it's great. If I'm surfing with 2000 to 2500 pounds of ballast it has no problem coming out of the hole quickly and getting the wave formed no problem. Admittedly I have the 340 engine, but It's also the 23' boat.

Maybe ask the 'experts' how they think the 537 would compare to the ones they suggested?

As far as top end, I'm not sure. I don't ski quite as fast as you do, more like 30 to 32 for me. And I've only skied a few times behind the XLV.

Another thing to consider is your location. I typically boat above 6,000 feet so need a decent prop to compensate for my elevation. I am not sure what prop I have now, but it does great at surf speeds and can barely hit 36 MPH at WOT.

Try the ACME 537 or 1161. Can't beat the compromise on these if you want to ski. You are not running crazy ballast anyway. You will probably be surprised.

By the way, Wakemakers and Nettles do not own this model of boat. They can give you solid recommendations and they sell a lot of props. But, you can decide for yourself what works for you.
