02 Moomba thermostat Help!

I have recently replaced the engine in my 02 Mooba Outback. Now there seems to be an issue with the thermostat. We are using a 160 tstat purchased from an auto parts store. The tstat doesn't seem to be working because the temp is going beyond 180. Does anyone have input on the type of thermostat to use or what other problems could be occurring. The tstat is in the bottom part of the intake. When the tstat is out of the boat the tempurate gauge stays below 100 degrees, our water is only 60 degrees now.

Don't rule out a bad thermostat or even a mislabeled one. You can throw it in a pan of water on the stove and check the temp with a thermometer. Make sure it opens at the correct temp and opens all the way. OR, there could be something wrong with your temp sensor or the gauge itself.
